Stuffed Red Pepper with Lentils and Feta
You will need:
1& 1/2 - 2 red peppers
4-5 mushrooms
Ready cooked Black Lentils (I found mine in waitrose)
Cumin powder
Coriander powder
Garlic powder
Coconut oil
Feta
Pine nuts (optional)
Pre heat oven fan 180c
1. Wash red peppers, cut top off and take the inside/seeds out! Cut the other pepper up and put into a mixing bowl, cut up your mushrooms and put into the bowl. Add in the cumin,coriander and garlic powder ( like I said before I don't really measure but it's about 1tsp of each add more if you want!) add in the lentils, some coconut oil about 1tbsp, and pine nuts (optional) then mix together.
2. Cut a little hole in the bottom of the whole red pepper so excess moisture can come out in the oven. Then rub some coconut oil around the outside of the pepper.
3. Cut up some feta as much as you want. Then start spooning the mixture into the pepper, I usually fill in half way up then add in some feta put more mixture all the way to the top, and add some more feta on top.
4. You will probably have some left over mixture so I usually just put it in a small baking tray and add some more feta onto the mixture. Place the pepper onto a baking tray and put both trays into the oven.
5. Cook for about 25-30mins checking on it regularly. It may need a bit longer.
6. Plate up and enjoy!!
